Recipe from Salad Love by Liza Cannata: This salad is a classic for a reason. It is absolutely bursting with flavor; sweet, tangy apples, pungent, cream cheese, crunchy nuts and hearty bacon coated with a honey mustard dressing. It is definitely on the heartier side, so it is a great salad to serve on its own. Or with a side of french fries. Wink wink.
Ingredients
- 4 slices bacon
- 4 cups torn Rainbow Romaine (1 package)
- 2 large red apples (Fuji or Gala) halved, cored and thinly sliced
- ½ cup crumbled local blue cheese or sharp cheddar
- ½ cup chopped walnuts, toasted
- Salt and freshly ground pepper
- For the Honey Mustard Dressing
- ¼ cup extra-virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 garlic clove, pressed or minced
- ¼ teaspoon salt
- Freshly ground black pepper
