Apple, Bacon, Walnut & Blue Cheese Salad

Recipe from Salad Love by Liza Cannata: This salad is a classic for a reason. It is absolutely bursting with flavor; sweet, tangy apples, pungent, cream cheese, crunchy nuts and hearty bacon coated with a honey mustard dressing. It is definitely on the heartier side, so it is a great salad to serve on its own. Or with a side of french fries. Wink wink.

Ingredients
  • 4 slices bacon
  • 4 cups torn Rainbow Romaine (1 package)
  • 2 large red apples (Fuji or Gala) halved, cored and thinly sliced
  • ½ cup crumbled local blue cheese or sharp cheddar
  • ½ cup chopped walnuts, toasted
  • Salt and freshly ground pepper
  • For the Honey Mustard Dressing
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 garlic clove, pressed or minced
  • ¼ teaspoon salt
  • Freshly ground black pepper

Preparation
  1. Cook the bacon in the oven or in a skillet over medium-high heat until browned. Drain, cool and chop into bite-sized pieces.
  2. Make the dressing: Place all ingredients in a jar with a tight fitting lid. Shake vigorously until well combined. Or, combine in a bowl and whisk until smooth.
  3. Place the lettuce, apples, bacon, cheese, and walnuts in a large salad bowl. Add about half of the vinaigrette and gently toss to coat. Add additional dressing to preference and toss again. Season to taste with salt and pepper.
